Do you ever have those feelings of complete and utter comfort? Where you feel so incredibly safe and relaxed, that you never want to leave? It’s often the smallest, simplest thing. Standing in a steaming hot shower after a long run in the cold; curling into bed on a cold night, drawing the covers around you like a thick cocoon; hogging the warmest hand dryer in the bathroom and not feeling a shred of guilt at the queue that’s formed behind you. For me, the same sense of comfort and relaxation comes from baking. And herein lies my excuse for the following stream of photos of recently baked goods.
Peanut butter swirl brownies.
Super easy recipe. Place 150g of unsalted butter, 1 1/4 cups of granulated sugar, 3/4 cup of cocoa powder, and a pinch of salt in a large bowl. Place in the microwave and melt in 30 second increments, stirring after each spurt until the butter has completely melted. The mixture will look gritty. Let it cool. Add a little vanilla extract, then 2 cold eggs (one at a time, stirring after each addition). The mixture should be shiny. Add 1/2 cup of flour, and whisk the mixture until combined. Pour mixture into a well-greased rectangular pan. Melt 1/2 cup of peanut butter in the microwave (until very liquid) and pour through the brownie batter, using a knife to create swirls. Bake for about half an hour at 180 degrees or until fully cooked.
